Ingredients
1 1/2 pounds petite potatoes (any color)
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1 teaspoon ground turmeric
1 pinch crushed red pepper
1 pinch cayenne pepper
Sea salt and pepper to taste
2 tablespoons fresh chives, chopped
Preparation
Steam potatoes (skin on) in a large, covered saucepan with one-inch of lightly salted water for 12 minutes or until tender; drain.
Toss immediately with olive oil, lemon, turmeric, peppers and salt. Allow to cool slightly, toss with chopped fresh chives.
Divide into equal portions and store in resealable plastic bags in the refrigerator for easy access during the week.
