Ingredients

  • 4 large Russet Potatoes
  • 1 lb. Dungeness Crab
  • 8 oz Mascarpone
  • 1/2 cup grated Gruyere
  • 1 tsp. Chipotle in Adobo
  • 1/2 tsp. Old Bay seasoning
  • 4 Tbsp. Chives or Scallions
  • 2 Cloves Garlic minced
  • Salt and Pepper to taste

Directions

  1. Wash russet potatoes, rub with olive oil and salt and pepper. Roast potato at 425 degrees for approximately 1 hour or until tender.
  2. Cut top off potato and scoop out filling, reserving the skin to create a shell. Mash potato with ricer or masher, add seasonings to taste.
  3. Place Dungeness crab meat in a bowl add Mascarpone, gruyere, old bay, chives and chipotle and lightly mix.
  4. Fill potato shell with crab mixture. Cover crab mixture with mashed potatoes, and top with crab legs, parmesan cheese and drizzle with olive oil. Bake at 350 degrees 15--30 min. or until golden brown and hot inside.
