Crushed Potato Salad


  • 1 lb whole fingerling potatoes
  • 1/2 cup olive oil
  • 2 Tbl chopped shallots
  • 1/4 cup chopped parsley
  • 2 Tbl chopped dill
  • 2 Tbl chopped mint
  • Fresh lemon juice - 1/2 half lemon
  • Salt & Pepper to taste


  1. Boil or steam Potatoes.
    If serving warm, remove potatoes from water and crush with a fork, leaving the potatoes chunky, or let cool and use your hands to
    crush them. Add chopped ingredients to potatoes.Toss in olive oil and lemon. Salt and pepper to taste. Use your choice of garnish.
