Frittata
with Vegetables
| 4 Eggs |
| 3/4 c. grated Cheddar
Cheese |
| 1/2 teaspoon salt |
| 2 Tbs Olive Oil |
1 c. cooked, diced
Potatoes (leftover or freshly
prepared |
| 1 small Yellow Summer
Squash, sliced thinly |
| 1 Tbs Jalapeno Pepper,
finely diced |
| 1 Tbs Red Bell Pepper,
finely diced |
| 1/4 c. Red Onion, finely
diced |
Oven
Temp:400 degrees
Beat together eggs, cheese
and salt, set aside.
Place Olive Oil in 9 inch
skillet, with oven proof handle.
Add potatoes and cook until
browned, add other vegetables and cook
until tender.
Pour egg cheese mixture
over vegetables, quickly stir. As it
starts to cook and set up, place in 400 degree oven.
Bake for 7 minutes or until knife inserted in middle comes out
clean. Place on a plate and garnish.
Serve Hot, serves 3 people
